Ingredients
- 1 kg chicken, cut into pieces
- 2 large onions, finely sliced
- 3 tomatoes, chopped
- 2 tbsp Amutham Chicken Masala
- 1 tsp Amutham Red Chilli Powder
- 1/2 tsp Amutham Turmeric Powder
- 1 tbsp ginger-garlic paste
- A handful of fresh curry leaves
- 3 tbsp oil
- Salt to taste
- Fresh coriander for garnish
Method
Step 1: Marinate the Chicken
Mix the chicken pieces with 1 tbsp Amutham Chicken Masala, turmeric, and a pinch of salt. Let it marinate for at least 30 minutes (overnight for best results).
Step 2: Build the Base
Heat oil in a heavy-bottomed pan. Add curry leaves and let them splutter. Add sliced onions and fry until golden brown — this is the key to a rich, deep curry base. Add ginger-garlic paste and cook for 2 minutes.
Step 3: Add Tomatoes & Spices
Add chopped tomatoes and cook until they break down completely. Add the remaining Amutham Chicken Masala and red chilli powder. Stir well and cook the masala until oil separates from the mixture.
Step 4: Cook the Chicken
Add the marinated chicken and mix well to coat with the masala. Add 1/2 cup water, cover, and cook on medium heat for 20–25 minutes until the chicken is tender and the gravy thickens.
Step 5: Finish & Serve
Garnish with fresh coriander leaves. Serve hot with steamed rice, appam, or parotta for a truly authentic South Indian experience.
